Banana Carrot Cake

I simply love bananas and banana bread was such a staple in my Grandma’s house growing up.  Here I took it to the next step, creating a delicious banana cake with cream cheese frosting.

Ingredients

For the Cake
1 ½ cups mashed bananas (about 4 large bananas)
2 cups, grated carrot (about 4 medium carrots)
4 large eggs
1 cup canola oil
2 cups cake flour
1 cup dark brown sugar
1 teaspoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
zest of 1 orange
½ cup roughly chopped pecans, plus extra to decorate the top of cake
melted butter – to grease loaf pans
For the Simple Frosting
2 ½ cups powdered sugar
6 ounces or 175 grams cream cheese
3 1/2 ounces or 100 grams of butter (room temperature)
1/2 teaspoon vanilla extract
2 teaspoons milk
2 teaspoons lemon juice

Banana Carrot Cake Loaf

Directions

For the Cake:
Preheat your oven to 300°F. Grease a couple loaf pans. Any size or amount desired, but not that the more amount of batter put into loafs will change baking time. Or grease 2 22cm round cake tins with melted butter.
Sift the flour, baking powder, baking soda and cinnamon together and set aside in a medium bowl.
In a medium bowl fitted with an electric mixer, beat the eggs and sugar together until light and fluffy, then add the orange zest and oil and continue beating. Carefully fold in the sifted cake flour mixture until smooth. Fold in the mashed bananas, grated carrots and pecans (if adding).
Pour into the prepared cake tins or loafs and bake for 40-45 minutes or until a skewer inserted into the center comes out clean. Baking times may vary depending on loaf size. Allow to cool for 20 minutes before turning onto a wire rack to cool completely. In the meantime, prepare the frosting.
For the Frosting:
In a medium bowl, combine all ingredients for frosting. Using an electric mixer, beat ingredients until light and fluffy. Let cake cool before frosting cake loafs. Top with pecans any way desired.

Recipe Notes

Allow cake to cool before removing from loafs or tins. Allow to cool before frosting.
