Zucchini-Muffins

Carrot cake may be the star of a classic Easter dessert spread but I always make a batch of ZUCCHINI MUFFINS. Not only are these muffins a great alternative to carrot cake but they go perfectly on your dinner plate as a bread recipe next to your holiday ham and mashed potatoes.
