I love Fall, it gives me an excuse to bake inside. Here is a recipe for mini apple pie cups made with grands biscuits and filled with cinnamon apple oats.
Ingredients
5 frozen Pillsbury grands flaky layers biscuits
2 large apples peeled, cored and sliced into cubes
2 tablespoons old-fashioned oats
½ cup butter cubed
1 teaspoon cinnamon
½ teaspoon all-spice
¼ cup sugar
Caramel – optional for garnish
Directions
Preheat the oven to 350 degress F.
Grease a 12 cup cupcake pan and cut 10 squares of aluminum foil and set aside. Using a knife cut the the biscuits in half and flour the surface for a work area. Then, take each half biscuit and roll it flat into a 4 inch discs. Gently fold the dough into the cupcake in, covering the bottom and the sides up the pan. Using aluminum foil, cover the pie cups and fill with a few Ceramic Baking Beads to flatten the dough when baking.
Meanwhile, peel, core and slice apples. Combine the sliced apples, cinnamon, oats, sugar, all-spice and butter. Toss to mix and coat apples. Place a spoonful of the mixture into each cup. Also, be sure to include at least a few small butter cubes in each pie cup. The apples will bake down, so it is okay if they are over flowing. Bake for 20-30 minutes at 350 degrees For until gently browned. Let them cool and then carefully remove them from the pan. Garnish with favorite caramel sauce by dipping spoon in jar and drizzling it over individual pies.
Serve warm with whip cream!
