What’s a spring or summer grill without chicken kebabs?  Kebabs have become very popular in Western food culture over the last few decades.  They are most commonly referred to as “shish kebabs”.  Kebabs are one of my favorite ways to prepare a skewer of grilled meat.  Cube meats and vegetables and prepare a dipping sauce to accompany the kebabs.

 Here are a few notes on preparing skewers to keep in mind.  Stainless steel skewers work best.  However, wooden ones will work.  Before using wooden skewers, soak them in water for about 15 minutes before use can reduce wood splinters.  Also don’t skew heavy cubes of meat, this is cause the wood skewers to split in half.  Before applying any food to stainless steel or wooden skewers, apply a light coat of cooking oil to the skewer.  Meats and vegetables will come off very easily.
