Turkey Panini Sandwich

Ingredients

Sliced ciabatta bread, pita bread or flat bread
4 oz. mozzarella cheese, Swiss, pepper jack or goat cheese
Finely minced yellow or white onion
1 clove garlic, finely minced
salt & pepper to taste
sliced tomato
Sandwich:
½ cup cooked turkey, shredded
2 tbs. cranberry sauce
¼ cup baby spinach
1-2 teaspoon Dijon mustard

Directions

Heat a Panini or sandwich press according to the manufacturer’s instructions.(Sandwich & Panini Pressir?t=swanreci 20&l=as2&o=1&a=B0001AG8F0)
Pre measure ingredients and slice the bread if it needs to be.
Using a spatula or butter knife, spread the cranberry sauce and Dijon mustard on both sides of the bread.  Place a bread slice on machine and begin to assemble.
Top half the amount of shredded turkey then top with choice of cheese, tomato slices, garlic, onion, spinach and salt/pepper to taste.  Follow up by topping it off with the remaining turkey.
Pull the top down and cook until they are browned and crisp, 3 to 6 minutes, depending on how hot your machine is.
Carefully remove from the press and serve immediately.

  • Top half the amount of shredded turkey then top with choice of cheese, tomato slices, garlic, onion, spinach and salt/pepper to taste. Follow up by topping it off with the remaining turkey.
