Cherry Avocado Salad

Ingredients

  • 2-3 cups kale
  • 1/2 tablespoon olive oil/coconut oil
  • 1 medium lemon
  • 1/4 cup blueberries
  • 1/2 cup diced cherries
  • 1 avocado
  • 1/4 cup pecans , chopped

Instructions

  • Place kale in a medium bowl. Message the kale to break down the toughness until it becomes limp, about 1 minute. Add a little olive oil if needed during messaging it. Squeeze lemon juice into bowl with olive oil and mix with greens. Add chopped cherries, blueberries and pecans. Slice, peel and remove pit from avocado, then slice and place in bowl. Toss salad and top with Parmesan cheese if desired.
