Peel and slice bananas to into just under 1-inch pieces. In a small dish, whisk honey and 2 tablespoons warm water.Heat a medium skillet over medium-high heat. Melt coconut oil and add banana slices to skillet. Fry each side for about 2 minutes (4 minutes total). I used a spatula to carefully flip them over.Remove skillet from heat and pour honey mixture on top. Mixture should reduce slightly. Transfer to plate and sprinkle with cinnamon.
NOTE - Bananas should be slightly green (not brown) before making this dish. Also, the more liquid used, the mushier the banana. I made this dish without honey/water as well and they are crispier.
