Healthy Blueberry Muffin Energy Bites that satisfy hunger. Made with simple ingredients like oats, flax seed, raw honey, cinnamon, cashew butter, dried blueberries and Pichuberry Puree. Serve for breakfast or as a snack!
1cupdried blueberries or 2 pints fresh blueberries
1/2cupunsweetened coconut flakes
1teaspoonground cinnamon
1/2cupdark chocolate chips
1scoopprotein powder, totally optional
1/3cupraw honey
3tablespoonsPichuberry Puree
1cupcashew or cookie butter
1/2teaspoonvanilla extract
Instructions
If using fresh blueberries, you'll need to dry them in the oven. If using already dried blueberries, skip step below.Wash blueberries and pat dry with paper towel. Preheat oven to 225 degrees F. Line 2 baking sheets with parchment paper then spread blueberries on baking sheets without the blueberries touching. Bake in oven for 4 hours. In a large bowl, combine old-fashioned oats, flax seed, dried blueberries, coconut flakes, chocolate chips, cinnamon and protein powder if using. Whisk to combine ingredients. Add in honey, Pichuberry Puree, cashew butter, and vanilla extract. Mix ingredients well with a spatula or your hands. Line a baking sheet with wax or parchment paper. Use a cookie scoop to scoop mixture. I used a 1 1/2 tablespoon scoop. Make sure to make a hard scoop, pressing scoop hard against bowl so the oatmeal mixture is packed into scoop. This will make it easier to roll and form.Roll into balls and place on cookie sheet. You may wash hands and dry after every couple balls are formed. This makes it easier to roll and compact mixture.Allow to set on cookie sheet for 1 hour or place in freezer for 30 minutes. Store in air-tight container. Maybe be good for weeks. These can also be frozen.
