Grilled cheese turkey panini with a sweet and savory cream cheese cranberry spread.  A delicious fall salad of lettuce, pecans, cranberries, and cheese with a lemon olive oil vinaigrette.  Meal prep made with steamed baby potatoes, bruschettinis and Nila Wafers.

Cranberry Turkey Pinini

My sister visited me in New Orleans recently and although it wasn’t her first time here, there was a lot to see that we didn’t get to the first time.  I’ve lived here for a few years so anytime friends and family come into town, I take off from work and spend all my time with them.  New Orleans is very touristy and has a little bit of everything to offer to both locals and tourists.

Luckily, the weather here has been nice, in the 70’s and no rain.  Midday gets pretty warm but after the sun goes down it’s the perfect time to walk around the city.  Even in the evening, there is still plenty to do as this city really never sleeps.

Since the weather outside was so beautiful, the first thing we wanted to do was take a boat ride down the Mississippi River, the same river that we have in Wisconsin. We also planned a bayou tour and knew we’d be out all day either driving or on the water.

Fasten + go

We packed a lunch prior to leaving using the NEW Rubbermaid® fasten + go kit from Target®.  The entree kit was enough for both of us to share for a quick lunch on the river.  

For this recipe, I used leftover turkey from Thanksgiving.  I froze a large portion of the meat the day after the holiday and simply reheated it in the oven with a little chicken broth to keep it from getting dry.  I was able to get everything packed while the turkey warmed up in the oven.  I included a delicious fall salad of lettuce/spinach with cranberries, pecans a little Parmesan cheese and an olive oil/lemon vinaigrette dressing.

I used the 1 cup capacity side dish to pack the salad into but the other can always be used to make a larger salad.

What I love about the fasten + go kit is that the entree kit is versatile.  I’ve used it for tacos and packed all the toppings into the containers and the shells in the bigger compartment.  The soup kit is wonderful for chili, chowder, bisque, pot roast, stews and more.  Lunch doesn’t need to be boring and with these food storage kits, meal prep is more manageable.

The entree kit has all the space needed for a meal.  It has a generous base portion for a salad or sandwich.  The smaller containers snap in place on the top and include 2 side containers with a 1 cup capacity each and 2 snack containers with 1/2 cup capacity each.  The outer lid snaps into place on the top and a removable strap makes carrying it comfortable and easy.  It’s also BPA-free and can be microwaved and is dishwasher safe.  This feature is especially important when packing lunches to take into work.

Sandwich and Salad

I’ve come to love this city and for now, I’m calling it home.  I greatly appreciate and welcome family and friends to come here and stay with me.  I take a comfort in being able to show them around the city to both historical places and cultural places.  This city has a lot of fantastic food including Creole, Cajun, French and Spanish cuisine.  Even if seafood is not an option (like for me) there is plenty of other local cuisine that is perfect for any foodie.  I can spend days walking around the city when friends come to visit.  There are a lot of other activities to do outside and around the city to enjoy.  In a city with so much cultural history and beauty, worrying about lunch is the least of my worries.  This kit truly is great to have for the days I’m out and about.

Grilled Cranberry Cream Cheese Turkey Panini

Ingredients
  

  • 2 slices sourdough bread
  • 2 slices Muenster Cheese
  • 1 thick slices Turkey breast
  • 1/4 cup cream cheese softened
  • 1/4 cup whole cranberry sauce
  • Lettuce
  • Cranberry Pecan Salad
  • 2 cups lettuce
  • 1/4 cup pecans
  • 1/3 cup cranberries
  • 1 1 /2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • Parmesan Cheese

Instructions
 

  • Heat stove top to medium-high heat and spray lightly with olive oil cooking spray. Mix cranberry sauce and softened cream cheese together. Using a grill pan, place slice of bread down. Top with turkey, Muenster Cheese, and lettuce. Spread cranberry cream cheese mixture over the Muenster cheese then top with lettuce. Grill until a nice golden brown then carefully flip over and spray a little cooking oil in pan to coat bread. To make salad, combine all the salad ingredients and toss together.
