Berry Mozzarella Pasta Salad with Key Lime Pie Dressing

A summer pasta salad with strawberries, raspberries, blackberries, mandarin oranges and fresh mozzarella balls. The salad is tossed together with a creamy, sweet key lime pie dressing made with vanilla yogurt and lime juice.

Ingredients

  • 8 ounces bow tie pasta
  • 2 tablespoons olive oil divided
  • pounds strawberries sliced
  • 9 ounces raspberries
  • 6 ounces blackberries
  • 10 ounces mandarin oranges drained
  • 2 cups red grapes
  • 8 ounces mozzarella balls
  • ¼ teaspoon black sesame seeds
  • 1 cup vanilla Greek yogurt
  • zest of 2 limes
  • zest of 1 lemon
  • 1 teaspoon lime juice
  • 1 teaspoon lemon juice
  • 1 + ½ tablespoons honey
  • 3 tablespoons packed brown sugar
  • ¼ teaspoon vanilla extract

Instructions

  • In a large pot filled with water and 1 tablespoon olive oil, cook pasta according to package directions. Drain and rinse pasta under cold water. Toss with 1 tablespoon olive oil to prevent pasta from sticking together. **Pasta can be prepared the night before and stored in the refrigerator, if needed. I like this method to ensure the pasta is cold.
  • Slice strawberries and place in a medium bowl with raspberries, blackberries, grapes and mandarin oranges; set aside.
  • To make the dressing, zest the lemon and limes then set the zest aside. Combine 1 cup vanilla Greek yogurt, lime juice, lemon juice, honey and brown sugar in a medium bowl and whisk until sugar has dissolved. Stir in a splash of vanilla extract. Add half the zest to the mixture and stir again.
  • To assemble, combine pasta and 1/2 the dressing mixture to a large bowl. Pour into a serving bowl. Next, Toss the fruit with the mozzarella balls and the remainder of the dressing. Top with renaming zest to garnish.
  • Serve cold
