This easy Instant Pot Black Beans recipe is perfect for beginners. Inspired by Costa Rican cuisine, these flavorful beans are made with simple ingredients like black beans, onion, garlic, and spices. They're ideal for use in tacos, soups, salads, or as a side dish in a traditional casado plate. No soaking required!
Rinse the dried black beans under cold water to remove any debris. There's no need to soak them!
Turn on the Instant Pot and select the "Sauté" function. Add a bit of oil, then sauté the chopped onion and minced garlic until they're fragrant and translucent, about 3-4 minutes.
Add the rinsed black beans, water or broth, salt, cumin, bay leaf, and optional bell pepper to the Instant Pot. Give everything a good stir.
Secure the lid and set the valve to the "Sealing" position. Select the "Manual" or "Pressure Cook" function and set the timer for 35 minutes.
Once the cooking time is complete, allow the pressure to release naturally for about 20 minutes. Then, carefully turn the valve to "Venting" to release any remaining pressure.
Remove the lid and give the beans a stir. If you prefer a thicker consistency, you can use the "Sauté" function again to simmer off some of the liquid.
