Peanut Butter Bars

Classic Peanut Butter Bars with a thick layer of chocolate topping. An easy peanut butter cookie bar recipe that's quick to put together for a delicious dessert. This old fashioned dessert square is a school lunch lady copycat recipe.

Ingredients

  • ¾ cup creamy peanut butter
  • ½ cup unsalted butter softened
  • cup granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 12 oz semi sweet chocolate chips
  • 3 tbsp milk may use half half or heavy cream

Instructions

  • Preheat oven to 350°F.
  • Beat peanut butter, butter, and sugar.
  • Mix in vanilla extract, and egg.
  • Slowly mix in flour, baking soda, and salt.
  • Evenly spread into a 9x13-inch baking dish.
  • Bake in oven 20-25 minutes.
  • Allow to cool slightly.
  • Melt chocolate in microwave on power level 4 OR using a double boiler method on the stovetop. To use this method, fill bottom of saucepan with 1-inch of water heated on low with a glass bowl that fits over the top of the pan and doesn't allow steam or water into the bowl.
    Stir in milk and mix until smooth.
  • Spread evenly over the bars.
  • Allow to cool before slicing and serving.
