Ingredients

  • 40 ounces (1.13 kg) (2.4 lbs) Ruby Red Tasteful Selections Potatoes
  • 1 teaspoon garlic , zested
  • 1 teaspoon pepper
  • 1 1/8 teaspoon salt
  • 1/3 cup olive oil
  • 1/4 cup parmesan cheese
  • fresh or dried parsley , chopped

Instructions

  • Set your oven to 400°F (200°C) to preheat while you prepare the ingredients.
  • Slice the Ruby Red Tasteful Selections Potatoes in half.
  • In a medium-sized bowl, combine garlic, black pepper, salt, olive oil, parmesan cheese, dried parsley
  • Add a handful of the sliced potatoes to the bowl with the seasoning mixture. Toss the potatoes to ensure each piece is evenly coated with the mixture.
  • Place the coated potatoes cut side down on a sheet pan, making sure they are spread out in a single layer.
  • Bake in the preheated oven for 40 minutes. Flip the potatoes once or twice during roasting to ensure they develop a nice, even color.
  • Once the potatoes are golden and crispy, remove them from the oven and serve hot.
