It’s all about moderation and learning to substitute ingredients and that’s why this cake is the perfect low-carb, keto friendly staple!
I’ve lightened up a classic lemon poppy seed cake and made it into a protein-rich keto breakfast snack that won’t break any rules! This recipe is made with almond flour, eggs, sour cream, fresh lemons and LIVfit Superfood® Organic Superfood Blend for added protein. The protein powder from BetterBody Foods has no sugar, artificial colors, flavors or sweeteners. In fact, it’s made with a handful of fresh fruits and vegetables and it’s free of allergens like gluten, dairy, and soy. For the Keto Protein Cake
- 1 1/2 cups sour cream
- 24 packets SPLENDA® Naturals Stevia Sweetener ( or sweetener of choice equivalent to 1 cup granulated sugar)
- 3 large eggs
- 2 zest of 2 lemons
- 5 tablespoons fresh lemon juice ( about 2 lemons )
- 2 teaspoons vanilla extract
- 1/4 cup BetterBody Foods LIVfit Superfood® Organic Superfood Blend
- 3 cups almond flour
- 3 teaspoons baking powder
- 1 1/2 tablespoons poppy seeds
For the Keto Protein Frosting
- 12 ounces brick style cream cheese, softened
- 6 packets SPLENDA® Naturals Stevia Sweetener ( or sweetener of choice equivalent to 1/4 cup granulated sugar)
- 2 teaspoons vanilla extract
- 4 teaspoons heavy cream
- 1/4 cup BetterBody Foods LIVfit Superfood® Organic Superfood Blend
Instructions
- Preheat oven to 350 degrees F.Prepare a 9 x 9 or 8 x 8 baking dish with parchment paper. I usually just run a thick strip down the center that overhangs the sides to easily remove later.In a medium bowl, combine 1/4 cup BetterBody Foods LIVfit Superfood® Organic Superfood Blend, 3 cups almond flour, and 3 teaspoons baking powder. Whisk together to combine; set aside.In a large bowl, beat sour cream and sweetener of choice. Beat in 3 eggs, zest of 2 lemons, 5 tablespoons fresh lemon juice, and vanilla extract.Mix in LIVfit Superfood® Organic Superfood Blend, baking powder, and almond flour mixture until blended.Pour batter into baking dish. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.Cool the cake. Meanwhile, to make the protein frosting, beat cream cheese, sweetener of choice, vanilla extract, and heavy cream until smooth. Slowly beat in 1/4 cup BetterBody Foods LIVfit Superfood® Organic Superfood Blend until smooth.Ice cake with frosting. Refrigerate for at least 1-2 hours. Slice cake into 16 slices; serve.

Having multiple diabetics in my extended family, I love any dessert that’s low in carbs, and Lemon desserts are my all time favorite. I love that your LivFit superfood blend has blueberries, because they go well with lemon, but do you taste the broccoli that’s in it?
