Pulled Pork Nachos

Pulled Pork Nachos are a fuss-free weeknight dinner that is packed with protein.  These nachos make an interesting change from traditional cheese or beef nachos.  You may be surprise to know that pulled pork nachos are very popular!  They’re a great new twist on the classic halftime snack.

These pork nachos start with a layer of crispy corn tortilla chips and shredded cheese.  After they are all gooey and melted, top with cooked pulled pork and toss with black beans, tomatoes, avocado, cilantro and spicy jalapenos.

Pulled pork nachos are so much better than the traditional stale chips and cheese sauce we all grew up eating at ball games and sporting events.  These nachos are the real deal.  Think authentic Mexican restaurant, real.  We all have our favorite nacho recipe from a restaurant but these are the next best thing, if not the best.  It’s pretty easy to prepare and will be ready in no time.  Prefect for weeknight meal or as an appetizer.

Some of my favorite things are packed into a pile of deliciousness.  How can you go wrong with homemade nachos topped with melted cheese, pulled pork and an array of vegetables?!?  These pulled pork nachos are a fantastic way to use leftover barbecue pork.  If you are anything like me, you will be making these tonight!
