Cheesy Red Mashed Potatoes
Creamy, rich White Cheddar Red Mashed Potatoes with parsley, garlic and herbs, butter, cheese, milk and seasoning. Serve as a side dish for dinner, holiday parties and potlucks.
Classic comfort food doesn’t get any better than this. Mashed potatoes are a staple in our house, mostly because they can be made into so many different side dishes.
I’m a meat and potatoes kind of gal and I just love red potatoes with the skins on them. They’re great because they don’t require much hands on time and are simple to prepare. Also, because I’m from the Midwest, cheese is like water around here so I’ve also included a tangy, Sharp White Cheddar, which I’m obsessed with right now.
What I make red mashed potatoes, I don’t use any special kitchen equipment. It’s especially true for this recipe which uses a potato masher or fork.
What I love about this recipe is that it’s so easy to make and uses just a few simple ingredients that most people already have in the refrigerator.
You’ll want to boil a large pot of water on the stove top, wash the potatoes, cube them and place them in the water. Allow to boil for 30 minutes until they are soft.
Using a shredder, shred the cheese and set aside. Drain the potatoes in the sink and place in a large bowl. Add the butter because this is the most important step! Can’t have mashed potatoes without any butter, ever!
Add the herbs, seasoning and milk and mix it all together.
Lastly, stir in the shredded white cheddar cheese!
Ingredients
- 2.5 - 3 lbs red potatoes
- 7 tablespoons butter
- 1/3 cup milk
- 2 garlic gloves (, minced)
- 1/2 teaspoon Lawry's seasoning
- 1/2 teaspoon garlic salt
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup white cheddar cheese
Instructions
- In a large pot, bring enough water to cover all the potatoes to a boil over medium high heat. Wash potatoes and remove any sprouts. Cube potatoes into small chunks and boil in water for 30 minutes or until soft. Drain and place potatoes in large bowl. Chop butter and add to bowl then using a potato masher, mash them or an electric mixer. Add milk, Lawry's, minced garlic, garlic salt, salt and pepper. Once everything is mixed well, fold in shredded white cheddar cheese.

I guess they were just shy of being done, though I could stick my fork in them easily. Needless to say – it was frustrating! But these look fantastic.
