Summer is wrapping up and the temperature is finally starting to drop here.  Its been an incredibly rainy year and it shows no sign of letting up.  Last week, a storm hovered over Baton Rouge and drenched the south.  The result was devastating.  The rivers swelled and couldn’t empty into already full bayous and lakes.  I’ve been buying produce from the Baton Rouge area all summer and was devastated to learn that local farmers and the community lost so much.

Meanwhile, we’ve taken in a few friends and are trying to stay active throughout the process.  Next week, we’ll head to Baton Rouge and help with the cleanup.  We’ve made a few trips back and forth to collect valuables, which means we’re usually on the go.  I’ve been packing salad for lunch and dinner, which allows us to have a quick meal and stay active.

Ingredients
  

  • 3.5 oz Spring lettuce mix
  • 1 cup strawberries
  • 1 1/2 cups blueberries
  • 1/2 cup cucumber , sliced
  • 5 oz fresh mozzarella , diced or balls
  • 1/2 green apple , sliced
  • 1/4 cup strawberry vinaigrette dressing
  • 1 teaspoon orange zest

Instructions
 

  • Dice cucumber and fresh mozzarella. Slice strawberries and apple.
  • Combine lettuce and dressing in large mixing bowl; toss together.
  • Add sliced strawberries, apple, blueberries, cucumber and mozzarella; toss together.
  • Zest orange into bowl.
  • Serve cold.
