Summer is my favorite season and with good reason.  I can’t get enough fresh fruit and vegetables from the farmer’s market.  Maybe it’s the cookouts with friends or picnics at the beach.  Maybe it’s the lighter menu for lunch and dinner.  One thing I know for sure is that my fridge is stocked with fresh produce and meals usually take 20 minutes or less to make.

What I love most about this salad is that the peaches are grilled.  If you’ve never had a hot peach, you’re missing out on one of life’s little pleasures.

The grill marks are beautiful and warm peaches taste great with salads and ice cream…because you’ve got to stay cooled down this time of year, too!

Strawberry Peach Salad

These peaches can me made with a grill pan and a little oil to prevent them from sticking to the pan.  They can also be made on the grill next to burgers and chicken and served as a side dish.

Ingredients
  

  • 2-3 fresh peaches , sliced
  • 5-6 ounces mixed salad greens
  • 1 1/2 cups strawberries , sliced
  • 1/4 cup pecans , chopped
  • 1/3 cup feta cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon red wine vinegar
  • 1 teaspoon lemon juice
  • 4 teaspoons balsamic vinegar
  • pinch of salt
  • pinch of sugar

Instructions
 

  • Heat a griddle skillet to medium heat and coat with a little olive oil. Slice peaches then lightly press them into the skillet to get grill makes. Cook each side for 2-3 minutes then rotate until nice grill marks form.
  • In a small bowl, whisk together 1 tablespoon olive oil, 1/2 teaspoon red wine vinegar, 1 teaspoon lemon juice, 4 teaspoons balsamic vinegar, pinch of sugar and a pinch of salt. Add a dash of pepper, if desired.
  • In a large bowl, toss mixed salad greens, strawberries and grilled peaches with dressing.
  • Top with Feta cheese and pecans.

  1. Yummy salad! That looks absolutely gorgeous and I can just imagine the flavour from that awesome combo! I’ve tried a strawberry salad before but never with grilled peach, and adding feta is ALWAYS a good decision. Thanks for sharing.
