Ingredients

  • 2.5 lb. broccoli crowns
  • 1/3 cup olive oil do not use EVOO as it will burn
  • 1/2 zest of lemon
  • 2 tsp lemon juice about 1/2 lemon
  • 1.5 tsp salt
  • 1/2 tsp ground black pepper
  • 1/8 tsp red pepper flakes
  • 1.5 tsp ranch seasoning dry powder
  • 5 cloves garlic, minced or 1 tsp garlic paste
  • 1/4 cup raw sliced almonds
  • 1/3 cup grated parmesan cheese

Instructions

  • For crispy broccoli, preheat oven to 475 degrees F. (For less crispy florets, preheat oven to 450 degrees F.)
  • Wash and cut broccoli florets from thick stalk.
  • Slice or pick apart florets into individual pieces or about 1/2 inch thick broccoli steaks.
  • In a large mixing bowl, whisk together olive oil, zest of 1/2 lemon, 2 tsp lemon juice, salt, pepper, red pepper flakes, ranch dry seasoning powder, and garlic.
  • Toss broccoli florets into bowl and coat well.
  • Spread onto a large rimmed sheet pan.
  • Bake in oven 10-12 minutes.
  • Remove pan from oven and flip broccoli over. Sprinkle almonds onto the baking sheet.
  • Bake for another 5-10 minutes or until desired tenderness is reached. TIP: Almonds will toast quickly. Only add them the last 5 minutes of baking.
  • Remove from oven and sprinkle with grated parmesan cheese.

Notes

  • CRISPY TIPS: For perfectly crispy charred broccoli, turn the oven temperature to 475°F. This will quickly cook and char the broccoli sprouts.
  • SOFT BROCCOLI TIPS: For less crispy tops, reduce oven temperature to 425-450°F. Then, bake and flip over until desired softness is achieved.
My broccoli is burning, now what? To prevent burnt broccoli, be sure to use an oil with a high smoking point. Extra virgin olive oil has a lower smoking point than olive oil which will result in burning. You can also opt to use vegetable oil. Also, your oven may be too hot. You can reduce the oven temperature by 25°F to see if that helps. If a problem occurs, adjust accordingly. Oven temperatures can vary and either bake too hot or not hot enough.
What can I do with the leftover broccoli? Can I freeze broccoli? Any leftover broccoli can be froze. Allow the broccoli to cool then flash freeze it in the freeze on the baking sheet for 30 minutes or/then toss it into a freezer-safe bag. The oven-roasted broccoli can remain frozen for up to 3-6 months. To use, allow to slightly defrost on the countertop or refrigerator then roast it in the oven at 450 °F or until warmed through.
