Throughout this post, I talk about the variety of cooking methods that can be used to cook broccoli. However, my favorite method is to char it. This oven-baked method quickly roasts the broccoli while making it soft, tender, and crispy.

What Ingredients are Needed for Roasted Broccoli?

Traditional Roasted Broccoli Ingredients:

  • BROCCOLI: I use 2.5 pounds of broccoli crowns. Weight the broccoli on the scale at the grocery store.
  • OLIVE OIL: Olive oil coats the broccoli with seasoning.
  • SALT: Roasted vegetables taste the best with a little salt. Salt helps to heighten broccolis flavor.

  • GARLIC: One of my favorite ingredients that I use in nearly every dish. Garlic can be minced, zested, or be from a paste.

Pro Tips: Sheet Pan Roasted Broccoli

  • CUTTING THE BROCCOLI: First, cut the big, thick stems off the broccoli crown. Next, cut the crown into 1/2 inch steaks. Some florets might fall off in the process. Add those florets to the wet seasoning bowl because they will be baked in the oven, too.
  • BROCCOLI SEASONING: The key to perfectly roasted broccoli is to coat it in olive oil and season it. This helps properly soften and cook the broccoli at high oven temperatures.
  • CARAMELIZATION: A wet marinade of olive oil and seasoning along with high oven temperatures helps to caramelize the broccoli florets. As it bakes, the moisture from the broccoli will create steam that helps to quickly caramelize the broccoli. Be sure to use a high smoking point oil such as regular olive oil, coconut oil, or vegetable oil.
  • ALMONDS: Almonds add a crunch to this olive oil oven broccoli recipe. Already roasted almonds that are traditionally used for salads or raw almonds will work. If using raw almonds, add them to the sheet pan halfway through cooking.
  • CRISPY TIPS: For perfectly crispy charred broccoli, turn the oven temperature to 475°F. Then, evenly spread the prepared broccoli onto a sheet pan. Roast for 10-12 minutes then flip and roast for an additional 5-10 minutes. This will quickly cook and char the broccoli sprouts.
  • SOFT BROCCOLI TIPS: For less crispy tops, reduce oven temperature to 425-450°F. Then, bake and flip over until desired softness is achieved.

MY BROCCOLI IS BURNING, NOW WHAT? To prevent burnt broccoli, be sure to use an oil with a high smoking point. Extra virgin olive oil has a lower smoking point than olive oil which will result in burning. You can use regular olive oil, coconut oil, or vegetable oil. Also, your oven may be too hot. Reduce the oven temperature by 25°F to see if that helps. If a problem occurs, adjust accordingly.

IS ROASTING BROCCOLI QUICKER THAN THE STOVETOP? Yes, steaming broccoli takes time and if you add too much water to the pot, it takes even longer. HOW TO SERVE BROCCOLI: Roasted broccoli can be served as a side dish to any dinner recipe. WHAT CAN I DO WITH THE LEFTOVER BROCCOLI. CAN I FREEZE IT? Any leftover broccoli can be froze. Allow the broccoli to cool then flash freeze it in the freeze on the baking sheet for 30 minutes or/then toss it into a freezer-safe bag. The oven-roasted broccoli can remain frozen for up to 3-6 months. To use, allow to slightly defrost on the countertop or refrigerator then roast it in the oven at 450 °F or until warmed through.

Ingredients

  • 2.5 lb. broccoli crowns
  • 1/3 cup olive oil do not use EVOO as it will burn
  • 1/2 zest of lemon
  • 2 tsp lemon juice about 1/2 lemon
  • 1.5 tsp salt
  • 1/2 tsp ground black pepper
  • 1/8 tsp red pepper flakes
  • 1.5 tsp ranch seasoning dry powder
  • 5 cloves garlic, minced or 1 tsp garlic paste
  • 1/4 cup raw sliced almonds
  • 1/3 cup grated parmesan cheese

Instructions

  • For crispy broccoli, preheat oven to 475 degrees F. (For less crispy florets, preheat oven to 450 degrees F.)
  • Wash and cut broccoli florets from thick stalk.
  • Slice or pick apart florets into individual pieces or about 1/2 inch thick broccoli steaks.
  • In a large mixing bowl, whisk together olive oil, zest of 1/2 lemon, 2 tsp lemon juice, salt, pepper, red pepper flakes, ranch dry seasoning powder, and garlic.
  • Toss broccoli florets into bowl and coat well.
  • Spread onto a large rimmed sheet pan.
  • Bake in oven 10-12 minutes.
  • Remove pan from oven and flip broccoli over. Sprinkle almonds onto the baking sheet.
  • Bake for another 5-10 minutes or until desired tenderness is reached.
  • Remove from oven and sprinkle with grated parmesan cheese.

    Delicious! I usually roast my broccoli. This recipe took roasting broccoli to a new tasty level. I had 2lbs of broccoli. My only concern is the sauce just covered that. So any more might have left some of the broccoli dry.
