Summer is here and if you are anything like me, you’re cooking and using in-season produce from your garden, grocer, or farmers’ market to make your meals at home. Deciding how to use fresh produce that you may have an abundance of can sometimes be a challenge, especially when you’re used to making the same recipes for your family.
During the long summer days, I like to prepare simple vegetable dishes that don’t require a lot of ingredients or effort to make like this crack tomato recipe. I’ll add tomatoes to salads and breakfast dishes or roast them for dinner. Any leftovers get added to breakfast recipes or I simply make them into an appetizer.
HOW TO MAKE OVEN-ROASTED TOMATOES
- Combine oil, ranch seasoning, salt, pepper, and red pepper flakes.
- Cut cherry tomatoes in half.
- Toss tomatoes in the seasoning mixture.
- Bake in a 375°F for 20-25 minutes.
- Move roasted tomatoes to a bowl.
- Toss with basil, feta cheese, and chives.

APPETIZER
Bruschetta: Everyone loves this tasty appetizer made with basil tomatoes, and fresh mozzarella cheese served on bread.
Skewer: Serve on a wooden skewer with a crusty toasted piece of crostini bread or thinly sliced baguette with a basil leaf, a few roasted tomatoes, and a mozzarella ball. Caprese skewers are a favorite for summer pool parties and cocktail party appetizers.

Pizza: Top a homemade or store-bought pizza with basil tomatoes. They will roast while it bakes in the oven.
ROASTED TOMATO INGREDIENTS
- TOMATOES: Use small tomatoes like cherry tomatoes or tiny tim tomatoes. Tiny tim tomatoes are usually more round than cherry but still come in containers. For a pop of color, incorporate yellow currant or orange tomatoes.
- RANCH SEASONING: Use the dry seasoning mix and not the classic wet salad dressing. Find this small packet of seasoning near the spices or salad dressing.
- OIL: Extra virgin olive oil or any oil will do.
- SEASONING: Salt, pepper, and red pepper flakes for added heat.
- BASIL: Fresh basil is a must. Simply roll the basil up tightly and cut long strands with a knife.
- CHEESE: I buy a small block of flavored or seasoned feta cheese and crumble it but use whatever you can find.
- CHIVES: This herb will add a mild onion flavor and a nice texture to the dish.

What kind of tomatoes should I use? Use cherry cocktail tomatoes or tiny tim tomatoes which are slightly more round than cherry.
Can I roast other vegetables with the tomatoes at the same time? Yes. However, I suggest using a separate baking sheet for other vegetables since the tomatoes will release liquid as they bake. Roasting cauliflower makes a wonderful addition to this summer vegetable dish.

Instructions

This is an easy, delicious recipe! I love roasted tomatoes as it brings out the sweetness in them. And this can be made up to the point of putting it in the oven earlier in the day to save rushing later. I’ve made a number of recipes roughly like this, and this is the best I think to date.
