If you’re looking for a simple, delicious, and healthy addition to your meals, you’ve come to the right place. Today, we’re diving into a recipe that’s become a staple in our kitchen—Instant Pot Black Beans. Whether you’re a beginner or a seasoned cook, this recipe is perfect for anyone who wants to enjoy flavorful beans without the fuss.

Why We Love This Recipe

Black beans, or frijoles negros, have always been a favorite in my kitchen, especially because of their versatility and how they elevate so many dishes. Whether I’m using them in soups, stews, tacos, burritos, or the traditional Costa Rican dish, Casado, they bring a rich, hearty flavor that’s hard to beat. In Casado, black beans pair perfectly with proteins like carne asada, chicken, or fish, alongside rice, salad, and even fried plantains. This recipe really captures the essence of Latin and Caribbean flavors, making it a comforting, satisfying meal for any occasion.

I also love that black beans are a great plant-based protein, which makes them perfect for meat-free meals like black bean burgers. Their deep flavor and smooth texture have made them a household staple for us!

A Taste of Costa Rica

I fell in love with frijoles negros during my honeymoon in Costa Rica. Every Casado dish I ordered featured these flavorful beans, and I couldn’t get enough. The rich, savory flavor of black beans added such depth to each meal, and now I’m excited to bring a bit of that Costa Rican magic into your kitchen with this easy Instant Pot recipe—no soaking required!

While in Costa Rica, I spoke to many locals about their daily routines. Typically, meal preparations start early in the morning. Since Costa Rica is close to the equator, the daylight hours are equal year-round. By six in the morning, breakfast is served, and then the women begin preparing food for the rest of the day, including black beans, which are enjoyed at both lunch and dinner.

Ingredients for Instant Pot Beans

Dried Beans: Choose your favorite variety—black beans, pinto, or kidney beans work wonderfully. No need to soak them in advance when using the Instant Pot.

Water or Broth: Use water for a simple, clean flavor, or opt for broth (vegetable or chicken) to add depth and richness to the beans.

Onion: One medium onion, diced, to infuse the beans with a savory, aromatic base.

Garlic Cloves: Use 2-3 cloves of garlic, minced or smashed, to impart a warm, earthy flavor.

Salt: Add salt to taste, but be sure to wait until the beans are done cooking to prevent them from becoming tough.

Cumin: A teaspoon of cumin brings a warm, smoky flavor, perfect for enhancing the beans’ natural richness.

Bay Leaf: A bay leaf adds a subtle herbal note, enhancing the overall depth of the dish.

Bell Pepper: One bell pepper, diced, adds a mild sweetness and a pop of color to the beans.

Instructions

Step 1: Rinse the Beans
Start by thoroughly rinsing the dried beans under cold water. This removes any dust or debris, ensuring your beans are clean and ready for cooking.

Step 2: Sauté the Aromatics
Set the Instant Pot to the “Sauté” function. Once heated, drizzle in a bit of olive oil, then add the chopped onion and garlic. Sauté for 2-3 minutes, stirring occasionally, until the onions become soft and translucent, releasing their sweet, savory aroma.

Step 3: Add the Ingredients
Turn off the “Sauté” function and add the rinsed beans to the pot. Pour in the water or broth (about 4-5 cups for every cup of beans), ensuring the beans are fully submerged. Next, stir in the salt, cumin, and bay leaf. If you’re adding bell pepper for extra flavor and color, mix it in now.

Step 4: Cook the Beans
Secure the Instant Pot lid, set the valve to “Sealing,” and select the “Manual” or “Pressure Cook” function. Set the timer for 35 minutes on high pressure. Once the cooking time is complete, allow the pressure to release naturally for 20 minutes. This step helps the beans finish cooking gently and ensures they are perfectly tender.

Step 5: Check and Thicken
After the natural pressure release, carefully turn the valve to “Venting” to release any remaining pressure. Open the lid and give the beans a good stir. If you prefer a thicker consistency, set the Instant Pot to “Sauté” again and simmer the beans for a few more minutes until they reach your desired thickness.

Your Instant Pot beans are now ready to enjoy! They make a versatile base for various dishes or a delicious side on their own.

    1. Hi Paulette! Great question 😊 You don’t need to add extra cooking time if you’re making two pounds of beans in the Instant Pot—the time stays the same. Just be sure to double the liquid and seasonings so the beans are fully covered and flavorful. The pressure cooker will adjust on its own by taking a little longer to come up to pressure. Enjoy your big batch!
