Strawberry Avocado Mozzarella Salad

A light and refreshing, fresh berry and avocado salad tossed together with spinach, fresh mozzarella cheese balls, and a basil balsamic vinaigrette dressing.  Serve as an appetizer, side dish or main meal.

It’s heating up outside and now is the time I find myself making more salad to satisfy my hunger.  When it comes to summer salads, I want a big bowl of fresh vegetables and juicy fruit.  What I love most is a delicious combination of sweet flavors with a little citrus and a lot of satisfying crunchy vegetables.  Add some salted cheese and that is the winning flavor combination.

Because it’s already near triple digits here, I like to do my grocery shopping at most once a week and sometimes, every 10 days.  Being a food blogger, I like to have a lot of extra produce around for recipe inspiration.  But just like everyone else, I make salads for lunch, dinner and pretty much for everyday summer occasions.

With summer just weeks away, I’ve already been seeing juicy fruit pop up everywhere.  I can never have enough fruit and vegetables this time of year.  It’s incredibly refreshing to eat on a hot summer day.

Ingredients

  • 5 oz fresh spinach
  • 1 + 1/4 cup diced avocado
  • 2 cups sliced strawberries
  • 1 cup raspberries
  • 8 oz mozzarella balls
  • 1 tbsp olive oil
  • 1/2 tsp red wine vinegar
  • 1 tsp lemon juice
  • 4 teaspoons balsamic vinegar
  • pinch of salt
  • 1/8 teaspoon black pepper
  • 1/2 tablespoon basil

Instructions

  • Wash spinach, strawberries, raspberries and avocado. Slice, peel and remove pit from avocado then dice. Slice strawberries.
  • In a large bowl, combine spinach and diced avocado.
  • In a small bowl, whisk together 1/2 tablespoon olive oil, red wine vinegar, lemon juice and 2 teaspoons balsamic vinegar then pour into spinach bowl and toss together.
  • Add sliced strawberries and raspberries.
  • In a medium bowl, toss together mozzarella balls with 1/2 tablespoon olive oil, 2 teaspoons balsamic vinegar, salt, pepper and basil then add to salad bowl. Toss everything well to coat.

    Wow that product does sound pretty cool, especially being able to keep all that fresh produce going for so much longer. I hate waste more than anything and it’s such a disappointment when you reach into the fridge only to find a very sad looking punnet of strawberries. This recipe sounds gorgeous too, especially with the mozzarella! 🙂
