It’s heating up outside and now is the time I find myself making more salad to satisfy my hunger.  When it comes to summer salads, I want a big bowl of fresh vegetables and juicy fruit. What I love most is a delicious combination of sweet flavors with a little citrus and a lot of satisfying crunchy vegetables. Add some salted cheese and that is the winning flavor combination.

At the time of writing this, it was already near triple digits. I like to do my grocery shopping at most once a week and sometimes, every 10 days. Being a food blogger, I like to have a lot of extra produce around for recipe inspiration. But just like everyone else, I make salads for lunch, dinner and pretty much for everyday summer occasions.

Meal Prep This Salad

One of the best things about this Strawberry Avocado Mozzarella Salad is how easy it is to prep ahead of time. If you’re like me and enjoy having fresh, ready-to-go meals, this salad is a perfect fit.

Here’s how to make it meal-prep friendly:

  • Prep the Ingredients Separately – Wash and slice the strawberries, dice the avocado (and squeeze a little lemon over it to prevent browning), and portion out the spinach and mozzarella balls. Keep each ingredient in its own airtight container.
  • Dressing on the Side – Mix the olive oil, balsamic vinegar, and lemon juice ahead of time and store it in a small jar. Shake it up before drizzling it over the salad when you’re ready to serve.
  • Combine Before Serving – When you’re ready to eat, simply toss everything together. This keeps the spinach crisp and prevents the avocado from getting mushy.

Who wouldn’t want to meal prep this salad? A delicious meal plus, the colors and flavors hold up beautifully!

Wow that product does sound pretty cool, especially being able to keep all that fresh produce going for so much longer. I hate waste more than anything and it’s such a disappointment when you reach into the fridge only to find a very sad looking punnet of strawberries. This recipe sounds gorgeous too, especially with the mozzarella! 🙂
