Strawberry Pina Colada Recipe

Creamy, sweet coconut cream pineapple banana Pina Colada with strawberry coconut rum poured into the bottom of the glass.  This cocktail is named “Lava Flow” because the strawberry rum rises to the top of the coconut cream, leaving a lava like appearance.

Pina Coladas are my all time favorite drink and I just love the coconut tropical flavors and pineapple.  Summertime is a great time to share them with friends and family outdoors.  Our family loves this super fun drink and I make them for every summer party we have.  If you love to entertain like I do, you’ll want to be sure to have this super easy and fun cocktail recipe.

This recipe is great on so many levels.  It’s partially frozen and cold and I love to serve them during summer at an outdoor pool party which is also great because this cocktail recipe is called Lava Flow.  The strawberry puree in this recipe is meant to rise above the cream of coconut and banana puree and appear like a volcano which is just perfect for a luau party.

Lava Flow Cocktail

Luaus are a fun way to enjoy time with friends and also are great for special occasions like birthdays, family reunions, holiday parties, graduations and girls night.

Hawaiian Luau parties should be fun with plenty of beach/aloha attire.  Use hula grass skirts, coconut bras, silk leis and tropical tiki decor. Use palm tree, sea shells, coconut shells, beach pails and flip flop decor.  Light coconut or beach scented candles at night and place tiki burning steaks in the ground.

Give the girls flowers to wear in their hair and a pair of flipflops. Set up a simple volleyball stage with an inflatable beach ball and have games like horseshoes and beanbag throws ready for everyone to play.  Make a playlist of Hawaiian music to play during the luau.

Pina Colada

I love to have family help with cooking a whole pig outside, fish or chicken and introduce Hawaiian flavors.  Ham Swiss sliders and jerk chicken are delicious recipes and fun finger food to serve.  Beverages should be fun, fruity and full of coconut, pineapple and mango flavors.

The luau is a great time to serve party punch made with 7UP® and Pina Coladas made with Malibu® Coconut Rum. I was able to get plenty of luau ingredients at my local Albertsons® banner store in town.  Ice cream is great to serve on an especially hot summer day and is fun to serve in drinks as well.  Serve fruit trays with fresh cut pineapple and other tropical fruit.  Serve finger foods and keep the menu fun.

Pina Colada Lava Flow Ingredients

You can get all these ingredients at your local Albertsons® banner store.  To find a location near you, click here and type in the zip code or state.  The Malibu® Coconut Rum in found in the alcohol aisle while the 7UP® is located in the beverage aisle.  Also, cream of coconut can be found near the mixed alcohol drinks.  You’ll want to have real cream of coconut for this recipe.  It truly is delicious and sweet and pairs perfect with Malibu® Coconut Rum.

Ingredients

  • 8 oz Malibu® Coconut Rum
  • 12 oz frozen strawberries, semi thawed
  • 1/2 cup 7UP®
  • 10 oz pineapple juice
  • 8 oz cream of coconut
  • 1 banana
  • 2 cups crushed ice
  • fresh pineapple wedges, for garnish

Instructions

In a blender, combine thawed strawberries in syrup, Malibu® Coconut Rum and 7UP® then blend until smooth. Run through a fine mesh strainer to remove strawberry seeds or simply pour in another container and set aside. Rinse blender to remove mixture. Combine cream of coconut and pineapple juice in blender then blend for a minute or so until mixed well. Pour into separate cup and set aside. Place ice in blender with banana and blend well. Add pineapple/coconut mixture to banana/ice mixture and blend again until frothy and smooth; set aside.

Fill glass 2/5ths the way up with strawberry rum mixture. TILT the glass and ever so gently and slowly pour in white pineapple coconut mixture into tilted cup--making sure the mixture drips down the side to the bottom. Strawberry mixture will rise to the top. Serve chilled with a straw and pineapple chunks to garnish.
